Kotetsu's Special Fried Rice - My version
Ingredients:
300 g chicken
½ bag of mixed frozen veggies
1 bag of frozen broccoli - cause I love broccoli!
1 tablespoon of mayo
1 stock cube of your choice (I had veggie)
however much you have leftover rice (I had a lot)
2 medium sized eggs
salt and pepper to taste
Preparation:
Fry the chicken in a bit of oil until cooked, add in the frozen veggies and let them thaw - keep tossing and/or mixing almost all the time.
Next, crumble in the stock cube, mix well so you don't get blobs of half dissolved stock in your mouth (not a nice experience).
Once the cube has dissolved add the mayo, again mix well. [I know this might seem an odd thing to add to the food, but it does make all the difference, and gives a nice tang, too.]
Remove mixture from pan, and wipe it, if necessary.
Add a bit of oil to the still hot pan, and scramble the eggs.
Add the rice to the egg, when they are still runny. Mix.
Let the rice heat up until they are popping on the pan.
Reintroduce the chicken and veggie mix, and stir into the rice.
Add salt and pepper if necessary.
Note:
This is my version. You can build your own however you like, really.
Fried rice is kind of a left over dish anyway, so feel free to use whatever you have in the fridge - but don't blame me if the combination doesn't work. ;)
Like I was debating on whether or not to add the celery I had, but decided against it, I don't think it would've worked with broccoli too well.
Also, I think mustard would work instead of the mayo, but you'd have to put in way less of it.
